I have an interview this week with an ambulance company in orange county. I've talked to a person with the company and they said theres a skills test with CPR, medical/trauma assessment, OPA/NPA, bagging. I'm confident with these skills, but I'm curious should I just do it the way I've been taught in my EMT class, for example CPR with ABCs or should I do the new CAB way that I've never been taught? Any other advice?

Go with what you are taught and certified to do. If your CPR is ABC then go with what.
 
Just keep calm, relax. And never perform a skill your not trained on. When all else fails remember ABC's.
