I go to NYC often and would like to monitor manhattan ems and ambulances. Can someone tell me what frequency they are on or are they dispatched by

Google is your friend. There are many sites documenting the FDNY frequencies.

CAD? Do you mean MDT? If so, yes.
They are dispatched by MDT. But you can get plenty of information without too many details (like patient address) over the air.

You won't hear much stuff over the radio other than "[unit] stand by for the assignment." That unit gets the assignment over a computer and they pretty much hit their screen for on-scene, occupied and on arrival stuff. They use numbers to identify hospitals. You really aren't going to hear much of anything for ambulances.

To the contrary, my volunteer ambulance corps listens to FDNY EMS radio all the time. One of our units can start rolling to the approximate location based solely on the FDNY EMS radio.

We participate in MARS (Mutual Aid Response System).
We contact the "MARS desk" to get specific information that was not over the air such as specific address and chief complaint.
We also notify them when responding and when we make patient contact.

Back on topic, you will get information such as
Dispatch: "Unit ABC for assignment"
Unit ABC: "ABC here..."
Dispatch: "90 Year Old female complaining of chest pains on X and Y streets."
or
Dispatch: "X and Y streets for the sick"

Notice the lack of details or specific address/apartment number.
 
you will hear plenty if you know what your listening too. It helps if your familiar with the area.
 
I did my ride time in Harlem and The Bronx and I heard not a lot of info come in over the radio. About 95 percent of the time every piece of info came in through the computer. You work in Manhattan, so you'll know more than me, but that is just my experience with the FDNY.
 
here is where i used to get all my frequencies, until i started my Basic class and they gave us a master book that prints a new edition every year. it has almost every public service frequency in the country listed in it.

You need a dispatcher like ED (#869 I think). He vollies for GOVAC. When I rods 53/54 Young, the GOVAC vollies would call him for the complete info.

ROB 123, where do you vollie? When I worked 46 Young I dealt with Forest Hills and Corona VAC's mostly.

Is ED still working? He was mostly on Queens East and Queens West.
