Apparently I'll be furthering my education on cooking next week.

Anyone got any good firehouse recipes that I can impress with?

FireHouse Lasagne

Cook 12 lasagna noodles and set aside.

1-pound of sweet sausage
1-pound of reg. hamburger
1 med. onion
Fresh mushrooms sliced (Small container or large depending on if you like mushrooms)
fresh garlic-to taste (minced I add about 1 tsp)
Brown all these together in one pan. Set aside.

1-32oz-lrg can of tomato sauce
1-16oz can of diced tomatos
2-packages of the dried spaghetti mix (find that in the spag. aisle or ask)
1-tsp of sugar
mix together and simmer about 20 minutes.

Add your meat mix and simmer until well mixed together. Stir occasionally.

1-small package of fresh parmesan cheese (make it fresh)
1-container of Rocotta cheese
1-lrg bag of mozzarella cheese
2 eggs
Mix all this together while your meat sauce is simmering.

Oven to 375 preheat

I use a cake pan

put a small layer of meat sauce on the bottom of the pan. Place the lasagne noodles 3 across. then a layer of meat sauce on each noodle, then place a layer of the cheese mix on the meat sauce. Repeat until noodles are gone. The meat sauce should be placed on the top and the last layer should be the cheese. (some people have put a layer of pepperoni on the top, I don't) Place aluminum foil over the top, and place in oven, bake for 30min. Remove the aluminum and bake until cheese on top is slightly brown. About 15minutes. Remove from oven and let stand for about 5 min. Serve hot and with garlic bread. And a BIG glass of milk.

Enjoy. Let me know how it goes.

Chicken and Stuffing

Get boxed stuffing; make like it says (usually water) put it in pan with boneless chicken breasts
cook for 35 min at 350 (I think)

check boxes of stovetop stuffing mix, the recipe is on the back: figure 2-3 breasts per person

+1 on the lasagna. I make mine very similar to that recipe and it always turns out great. Plus it's cheap.

Throw that stuffing recipe in the trash (no offense). Food out of a box or can is rarely appreciated and is usually grounds for agitation. Home-made is the way to go.

Rule #1: ALWAYS make enough! If you think it's just barely enough, make more.
Rule #2: If you're a probie, your food will not be good (even if it's great).
Rule #3: If it really does suck, try adding cheese or jalapeños ;)
Rule #4: If at all possible, avoid any food that is out of a box, a can, or is pre-cooked
Rule #5: NEVER undercook the chicken. Enough said.
Rule #6: Have food ready at a decent time (usually 5-6)

Corollary to Rule #2: If they tell you your food sucks and you're NOT a probie, be kind enough to dump their plate in the trash for them :P
