Gotta cook dinner next week for crew of 8. Any ideas?
 
Never met a fire crew that didn't like Steak.

Having said that, make sure you make something you make often. Don't try anything for the first time and make more than you need. It never goes to waste and that way nobody goes off hungry.

If another part of the crew goes on a call, make sure to have some foil to wrap their plates till they get back, it helps a lot.
 
Spaghetti, meatballs, garlic bread and ice cream.

Alternate dish: 1/4 lb kosher beef lowfat franks, quartered potates with parsley and butter, and enough sauted little zucchini for both.
 
Buy a few packets of Good Seasons italian dressing marinade packets (I think that's what they're called) and the cruet that they sell to mix the stuff. You'll also need vinegar (red wine or balsamic, I forgrt - the directions tell you). Buy some chicken cutlets and cut them into strips, or just buy chicken strips. Marinate the chicken for several hours in a ziploc bag or two, turning periodically. Then, take out the chicken, discard the extra marinade, and cook the chicken.

Meanwhile, wash and chop up two heads of red leaf lettuce. Add to that several sliced up hard boiled eggs. You can also put in carrot shavings, red onion slices, halved grape tomatoes, or croutons. Your choice. Make more of the marinade, it doubles as a great salad dressing. Have some parmesan cheese for sprinkling on top.

Last, make up some cheese quesadillas. For some spice, I like the sriracha (I think that's how it's spelled) hot sauce. Have some mild salsa on hand as well. It's also known as rooster sauce, as the bottle has a picture of a rooster on front. Find it in the asian aisle.

I'd go with 1/2 - 3/4 lbs of chicken per person. One head of lettuce for every five people. It's always better to have too much rather than too little. The chicken reduces a lot when you cook it since it's pumped up with water.

This should cost maybe 5-6 bucks per person, depending on the price of the chicken.
 
Another easy one, english muffin pizzas with a side salad, and some pasta w/meat sauce.

Three packages will make exactly four pizzas per person. Buy Thomas'. Spray the baking pans so they don't stick. Pre heat the oven to 375. Split all of the muffins in half. Use a brush or spoon and spread olive oil on the muffins. Then, sprinkle on italian seasoning and garlic. After that, spread on the sauce. Next, cover with mozzarella cheese, not too much since it expands and spreads with cooking. Don't buy low moisture part skim, or anything low moisture for that matter, it tastes like crap. Lastly, put a small amount of sauce on top of each one, in the center. It keeps the cheese from spreading too much, and also tastes good. Bake for 20-30 minutes, until the cheese is golden brown. Ovens vary.

In the meantime, brown two lbs of chop meat and season with italian seasoning and garlic. You can add the beef to half of the muffins between the sauce and cheese. Mix the other half with two jars of sauce and spread it over a lb of pasta. Have parmesan cheese and crushed red pepper on hand for toppings, and ricotta cheese as well if the budget allows.

For the salad, I'd again do red leaf lettuce, halved grape tomatoes, and croutons, no eggs or carrots. Maybe add some red onions and roasted, chopped walnuts for style points as well.

It's a heavy meal, so don't worry about not having enough.

6-7 bucks depending if the muffins, meat, or cheese are on sale. If no sale, keep it under 6 bucks a head by cutting out the grape tomatoes and walnuts. Use whatever's in the fridge for salad dressing. We always have four or more varieties on hand at any given time.
 
Oh, I forgot the realities.

Make asure whatever it is, it can be slapped between slices of bread when the tones drop. Serve drinks in travel mugs or sports bottles.
