California "Optional Skills"

Prepping for my Ambulance Driver test tomorrow I was going through CHP's little booklet and noticed that there are "Optional Skills" detailed requiring additional education. This section outlines things like Manual Defibrillation, Endotracheal Intubation, and ET Tubes.

How are these classes usually taught (if they are taught at all)? Or is this one of those odd California things that while technically can happen, doesn't really?

The books are probably out of date. I think the manual defib and intubation was removed when the EMS laws were overhauled back in 2010, however a handful still exist (IN narcan, and a few others). It's county dependent, so unless your county has adopted the skills you won't find courses for it.
