If you do a "dual major" in a 4-year college, do you get separate degrees and diplomas for each major, or just one degree and diploma?

Once you get one degree, and want another degree, you only need to take the courses that are specific to the second degree, correct?

I know of two- and four-year degree programs offered as part of an EMT-P program; is there any such thing as a Master's degree related to being a Paramedic?

I did a two year with an Associates degrees in both Fire Science and Paramedic Technology.
 
I think it depends on the university. If the dual major is something you "make up" on your own, you probably get two seperate degrees if you fulfill all of the requirements for both. If its a combined program that's offered by the University where they've structured it specifically to follow two tracks, it may be two seperate degrees, or it may be a special combined degree.

Getting a second BS after a first isn't always cut and dried. Most universities have specific requirements on what they will and won't allow transfer credit for when you're applying for a second degree. Best thing would be to talk to the specific universities you're considering.

The Emergency Management Institute at FEMA has a list of Public Health, Medical and Related Programs that lists several EMS-related BS and MS programs.
