The pop-up book of human anatomy really helped me...

When I took my A/P class I had Seeley's Essentials of Anatomy&Physiology 8th edition. I never really used it, and the couple times I did it seemed decent.

There's always anatomy coloring books..

For physiology i'd recommend Vander's human physiology.
