I have a few questions about the international ambulances. Is there a one stop shop for parts for these trucks. For stuff like headlight parts and air horn parts? Has any one had issues with these trucks? I live in NW Florida, what kind of certification do mechanics have to have to work on an ambulance?

It would depend on your service/maintenance people on how parts get ordered. But generally, it's just like car parts. As for certification, there is such thing as an Emergency Vehicle Technician certification for mechanics that work on fire trucks and ambulances. It's certainly not required though. We send our ambulances to our local mechanic all the time.
